Chocolate Peanut Butter Rice Krispie Treats

During my senior year at Taylor University, I had the privilege of being a P.A. (R.A. to most of you) for about fifty people. Ten of those students were the guys from the basketball team, and I enjoyed baking treats for them during their season. The problem? I didn’t have access to an oven, but I sure did know how to whip up Rice Krispie Treats in a microwave.

Many years later, it’s still one of my very favorite treats (especially chocolate peanut butter rice krispie treats). I’m passing on the tradition by showing my children how to whip up these delicacies in minutes by using our microwave and cereal coupons, of course. 🙂

Believe it or not, the fat gram content is quite low. When I want a treat without much  fat, I will make the traditional Rice Krispie recipe using just a little bit of butter and decrease the amount of marshmallows. They are a drier consistency, but it helps my sweet tooth without all the fat grams.

Rice Krispie Treats

Ingredients:

  • 3 tablespoons  butter or margarine
  • 1 package (10 oz., about 40)  regular marshmallows
  • – OR –
  • 4 cups  miniature marshmallows
  • 6 cups  Rice Krispies®

Directions:

  1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  2. Add Rice Krispies cereal. Stir until well coated.
  3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

MICROWAVE DIRECTIONS:
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above.

Chocolate Peanut Butter Rice Krispie Treats

When I want the “to die for” variety, I add a big scoop of peanut butter and/or chocolate chips into the marshmallow mixture, and follow the same directions above. If we’re really splurging, I add a layer of melted chocolate on top.

I have really sophisticated tastes, I tell you. I will pass on any cheesecake, torte or cake for my peanut butter/chocolate Rice Krispie Treats.

Yes, I will.

And if you’re wondering how to use up a slightly stale box of Cheerios that you find at the back of your pantry…oh yes, this works just wonderfully. They never even knew. 🙂

  2. Now I’m really wanting to make Rice Crispie Treats. I love these and just never think about making them. I’m going to try your tip with adding peanut butter to the marshmallow mix and melted chocolate to the top. Yummy!!

    My grandmother used to make the cookies that I posted about today all through my childhood and most of her adult life. For me, a holiday is not complete without these cookies.

    I loved to make peanut butter bars in high school and college. It’s a no bake recipe that tastes suspiciously like a Reece’s. Sinful.

  8. I confess, I Diann am a rice krispie-aholic! LOL I love them. Great memory from childhood. I find it a nice way to use up any of my stale cereal. The Hubs loves them made with fruit loops. LOL And I love them made with coco (pebbles) krispies!

  9. Your photos make me love them even more…if that’s possible! One of my girls just made the peanut butter version yesterday after church! I used to love making caramel corn with my best friend, partly because her family was so warm and fun to be around!

  13. Ice cream happens to be my all time favorite – I still love it today, especially with chunks in it. I find myself making what other people want, though. Rarely do I make a batch that’s just for me. Maybe I should. 🙂

  16. Love these. One of my favorite childhood treats…right next to s’mores.
    Would you believe that I never learned how to make rice kirspy treats until this summer? We need a snack idea to serve at our Vacation Bible School one night and this is what I came up with. It was such fun and I never realized how easy it was.

  21. Wow! You went to Taylor? So cool. My husband,brother, sils,bil,neices and nephews, cousins, Mil,Fil, have all gone to Taylor University. All the way back to my husband’s grandmother who passed away last year at 101 years old. Anyway, just had to share.

  22. Thank you. Thank you for saying that you’ll pass up a more sophisticated dessert for this yummy treat. I feel exactly the same way. To be honest, I almost never order dessert at a restaurant. Though the dessert may be beautiful, I always feel that it’s a bit of a let-down compared to one of my homemade (quite unsophisticated!) treats.

    I think we’ve always eaten my easy toffee cookies (made with saltine crackers) as our treat – in college and still do. Quick, easy & sooo yummy though it does require an oven!

  24. I LOVE Rice Krispie treats!!!!!!! My favorite is to add about 1/2 cup of peanut butter to the marshmallow and butter….I could eat the whole pan alone. I then eat it for breakfast, telling myself that it is cereal and protien! 🙂

  28. I am cracking up right now for 2 reasons: 1. I went to Indiana Wesleyan University (right down the road from TU. I hung out over there all the time and my husband and I had our first date at Ivanhoes.) 2. My roommate and I made Rice Krispy treats by the panful in college and would eat the whole thing in one sitting. That was during the fat free craze and we rationalized our gluttonous ways because Rice Krispies and marshmallows were fat free.

    It’s still one of my favorites…and totally NOT fat free because of all the peanut butter I stir into ours.

  29. I just wanted to let you know that I completely forgot to mail that check before we left for Michigan but it is on its way. My whole family loves Rice Krispie Treats and we experiment with all sorts of flavors and add ins.

    I make peanut butter rice crispy treats a little different but they are oh so yummy
    1c. peanut butter, 1 c. sugar, 1c. corn syrup 5 c rice crispies. Put everything in the microwave except cereal & let it boil 2 minutes. mix cereal in and let set. 🙂
